Valentines Cookies
Ingredients:
| 1kg | American Soft Cookie Mix |
| 200g | Cake Margarine |
| 70g | Water |
| 5th Avenue White Icing | |
| Raspberry / Strawberry Jam |
Method:
Place American Soft Cookie Mix and cake margarine in a machine bowl and blend together on 1st speed for 30 seconds.
Add water gradually over 30 seconds on 1st speed (the water should be tempered to give a final batter temperature of 28ºC (82ºF).
Scrape down and mix on 2nd speed for 30 seconds.
Pin out to required thickness and cut using round cookie cutters.
Every second one cut out a heart from the centre using a heart-shaped cookie cutter.
Place onto baking tray and bake at 170-185ºC (350-380ºF) for 18 minutes.
Leave to cool, then ice the tops with 5th Avenue® White Icing
Sandwich together with jam.
