Fruit Slab


Ingredients:

Ld Oz  
4 12 Delta Cake Margarine
5 0 Sugar
  2 Salt
     
6 0 Egg
  3 Glycerine

Method:
  • Cream margarine together for 5 minutes on medium speed.
  • Scrape down at least once during this stage.
  • Add egg in portions over 5 minutes.
  • Scrape down at least once after adding glycerine.

Colour & Essence (Egg Yellow, Vanilla, Butter & Lemon)

High Protein Flour 6 4 Sift together, add to above and
Baking Powder   1 mix until almost clear on slow speed.
       
Reconstituted SMP 1 4 Add on slow speed. Scrape
      down and clear on slow speed.
       
Currants 4 8 Add and mix to clear on slow
Sultanas* 8 0 speed or by hand. Scale at 3lbs
Cherries** 3 0 per 8"x8" frame.
Mixed Peel 1 8

* Sultanas may be used for Sultana Slab.
** Cherries for Cherry Slab or any combination of fruit.
